Curry pots, or "Kulukki Chembu" in Kerala, are vital in Indian cuisine, introduced by Portuguese settlers in the 16th century. Initially used for meat and fish, they became popular for vegetarian curries. Handcrafted from natural clay and fired in traditional Chulhas, each pot is unique.
Benefits:
- Health and Safety: Free from chemicals, these pots retain the natural goodness of traditional clay pots.
- Nutrient Retention: Porous clay allows for even heat and moisture circulation, perfect for slow cooking and preserving nutrients.
- Alkaline Nature: Neutralizes acidic food, helping maintain a healthy pH balance and reducing stomach issues.
- Versatility: Compatible with gas stoves, microwaves, and traditional Chulhas, retaining heat for longer periods.
How to Clean:
You can use mild soap to clean terracotta products. However, avoid using harsh chemicals or abrasive cleaners, as they can damage the natural surface of the terracotta. Salt or ash can be used as a non-toxic alternative to chemical cleaners. Sprinkle salt/ash into the pot and scour it using a scouring pad. Always rinse thoroughly and allow the product to dry completely before storing.
If any mold forms during storage:
· Mix equal parts water and white vinegar or cooking soda (baking soda).
· Place the pot in the solution and bring it to a boil.
· Boil the pot for 20 minutes. This will help loosen the mold and disinfect the pot.
· After boiling, use a brush to scrub the pot thoroughly, focusing on areas with mold.
· Rinse the pot with clean water to remove any remaining vinegar or soda solution.
· Allow the pot to dry completely in a well-ventilated area or under direct sunlight.
This method should effectively remove mold and help keep your terracotta pots clean and ready for use.
Storage:
After washing, make sure to store your earthenware in dry and well-ventilated areas. This will eliminate the risk of mold growth inside the pot.
If bacterial growth is of concern, dry the pots in Sun light or dry pots in a 200°F oven for 30 minutes before storing in a cool, dry place.
Curry pots are a testament to rich culinary heritage, adding unique flavor and health benefits to Indian cuisine.
